
This gorgeous fresh creation is modeled on the classic Thai green papaya salad. I love the spiralizer to make thin “noodles” of nearly all the produce, but you can also julienne or even use a regular veggie peeler to make curls instead.
One of the secrets of Thai cuisine is that it provides hints of all 5 flavors in many dishes. This is not only inherently healing and balancing to our whole bodymind system, but it’s also a way to impart depth to otherwise light dishes.
The fish sauce provides a hint of umami that grounds the heat of the pepper and makes the collection of light raw fruits and veggies more deeply satisfying. An excellent “vegucation” trick.
Feel free to top this one with some barbecued shrimp, fish or chicken or just enjoy it on its own as the crave-able salad it is!
