Eating regular cookie dough is a popular, though somewhat dubious, American pastime. Eating conventional raw eggs isn’t particularly safe. And cookie dough is as rough on the ole blood sugar as the cooked stuff.
This amazing version, however, is nearly perfect in my book – it’s super-quick to make, high in protein and fiber with a low glycemic load, vegan, and it tastes just like cookie dough! Instead of taking you out like cookies would, it’s actually an energy stabilizer in that late afternoon dark-zone of carb cravings 🙂
It’s so tasty you’ll want to eat it with a spoon! You can also use it as a more traditional dip with crisp apple slices or as a spread over banana spears with a little sprinkle of cinnamon. To make it into a fun dessert, scoop a few tablespoons into individual shot glasses and put together a selection of toppings for a DIY cookie dough “sundae” bar. Try mini chocolate chips, sliced fresh berries, juice-sweetened grape or strawberry jam, or Lakanto chocolate syrup.
